This is a delicious and healthy side dish to enjoy with some grilled meat or fish. It is a simple dish full of flavour, tenderness and goodness.

Vegan: Fragrant Tenderstem Broccoli and Beans.

Ingredients

300g Tenderstem broccoli
200g green beans
4 tbsps olive oil
1/4 tsp asafoetida (heeng)
1 tsp cumin seeds
1 tsp mustard seeds
7 curry leaves
1 fresh green chilli (optional)
1/4 tsp ground turmeric
salt to taste
To garnish: coriander leaves and lemon

Instructions

  1. Pour the olive oil into a pan and heat on medium-high. Put in the asafoetida when the oil is hot. Quickly add the cumin seeds, mustard seeds and curry leaves. While they are sizzling, toss in the broccoli and beans. 
  2. Now add the green chilis, turmeric powder and salt. Mix well. 
  3. Put on the lid and stir from time to time until the vegetables are tender.
  4. Garnish with coriander and lemons.

Notes

Note: larger veggies will take longer to cook, so add them first. You can also use okra or regular broccoli if you prefer.
