Decadent Chocolate No-Bake Energy Balls.

Healthy vegan Energy Balls filled with goodness and sweetened with dates. These no-bake, raw bites are packed with wholesome ingredients like almonds, chia seeds and linseeds. Perfect PALEO energy boost. I love to bring these with me for my stand up paddling or hiking adventures. They are guaranteed to be a crowd pleaser and definitely satisfy my sweet tooth. You will love these Energy Balls. They are fudge, chocolaty, rich, perfectly sweet, super healthy, easy to make and kind of amazing.

I usually do not eat refined sugar, as my skin goes crazy if I do so. But from time to time my sweet tooth kicks in. These energy balls are the perfect sweet snack for me. They taste like chocolate truffles to me.

Ingredients

2 cups of pitted dates

1 cup almonds

3 TBS chia

3 TBS linseed

6 TBS cacao powder

2 TBS coconut oil

1/2 tsp. cinnamon

OPTIONAL: cardamom powder

Instructions

  1. Put the pitted dates and almonds in your food processor. Process until the mixture is fine and homogeneous. 
  2. Add the rest of the ingredients to your food processor and until mixture just starts to clump together. 
  3. Roll your "dough" into balls and transfer to an airtight container to save for later. These can be stored at room temperature. 

Notes

Get creative - you can substitute the ingredients. Use your favorite nuts or substitute the dates with dried apricots or plums.
