THE ultimate Banana Bread with Indian Spices.

I grew up with a kitchen full of spices. They have so many health benefits and once you know the 101 of spices, it will be easy to use for you. I will save that for another blog post – Indian spices deserve a separate section on this blog.

As Indians, we ensure that spices form the base of any dish. We are not satisfied with a dash of salt and a squeeze of sour lime, we need spices. Balance is the key. If spices are consumed in moderation you can derive health benefits.

SPICE UP YOUR LIFE.

This recipe is completely Paleo. Paleo is a lifestyle which I adapted four years ago. In other words I MOSTLY do not eat refined sugar, gluten and lactose. The reason is my skin – I suffered from hormonal acne, which cleared out with Paleo lifestyle. The aim of a Paleo diet is to return to a way of eating that’s more like what early humans ate. The diet´s reasoning is that the human body is genetically mismatched to the modern diet that emerged with farming practices.

Ingredients

4 ripe bananas

3 eggs

1/2 vanilla pod (scrape out the pulp)

1 TBS honey OR maple sirup

2 TBS coconut oil 

200g ground almonds

1 TBS Weinstein backing powder

1 TBS cinnamon 

Optional: 1 Apple

The INDIAN TWIST - I love to use Chai Masala and some extra ground cardamom 

Instructions

  1. Preheat oven to 180 degrees and prepare a cake tin in box shape
  2. Smash bananas with a fork and add eggs, vanilla, honey and coconut oil and apple pieces in a bowl
  3. Add grounded almonds, baking powder, cinnamon and cardamom or Chai Masala
  4. Pour dough into the cake tin
  5. Put the cake tin into the preheated oven and bake for approx. 35 min till the desired color is reached
  6. Do the wood stick test and make sure the stick comes out clean
  7. Take out the banana bread out of the oven and let it cool down

Notes

Get creative - you can add raisins or cranberries for sweetness or use hazelnuts instead of almonds. For some crunchiness just add some seeds (sunflower or chia).
